Food: Instant Pot- Absolutely Amazin’ Apple Dumplins

 

I live on the outskirts of Charlottesville, Virginia.  I am surrounded by beautiful mountains that give life to many wineries, breweries, and ORCHARDS!   There are peaches, blackberries, strawberries, and yes… apples.

Tinky (Julia) has been obsessed with “ap-pulls” as of late.  She demolishes them!

While I know it’s not Fall anymore and we are inching on Spring, the weather has me all confused.  On Saturday, we had sleet and ice.  Today, Monday – it’s 74 degrees out and I have all the windows open.  Get it together Mother Nature.

Until then, I shall remain confused and will continue to pretend that I do not know what season it is.  Therefore, I made this YUMMY treat for Bubbins, Tinky, and myself.  Apple Dumplings.  Ahem, Apple Dumplins.  That’s better.

I had this craving for something sweet but not too sweet this weekend and saw my daughter munching away on her “ap-pull”.  I thought to myself  “I want to Instant Pot a dessert, but I’m not in the mood for cheesecake.”
Bubbins bought Shari’s Berries for me and Julia on Valentine’s day.  I will say, I am not a fan of their cheesecake but by God, their chocolate covered strawberries are divine! NOT to mention the cake-pops!  Yummy!

Ok Ok, I told you I like tangents.  As my sister and mom would say “focus Kimmy!”

So there I was, browsing on my iPhone for apple desserts in an Instant Pot.  Apple crisps, apple cobblers, apple cakes… wait- APPLE DUMPLINGS. Ahem, Apple Dumplins.  The recipe looked so amazing and super easy, plus I was really digging the set up of her blog!  You guys know I like to give credit where credit is due, so head on over to Tastes of Lizzy T for more wonderful recipes!

Now, I did make a few slight changes but nothing crazy.  I sprinkled apple pie spice on top before cooking and I also added a dash of allspice to the mix.  My local grocery store was out of Granny Smiths, I know, crazy, so I used honey crisp.  They were small so I put two slices in each apple dumplin.

When I made these, my whole house smelled like it was Autumn all over again.  I was so ready to peek outside to see leaves falling and jack-o-lanterns being lit.  Alternatively, this would make an excellent dish to take to an Easter Egg hunt party or maybe a July 4th celebration.  A twist on the all American apple pie.

Let’s just be real, this is good for ANY occasion.

  1. I really want to make these but…it’s not the Fall season so, I am unable to find apple cider. Could apple juice be substituted and will it taste even close to the way it would taste with the apple cider?
