Food: Instant Pot – Cilantro Lime Rice (Chipotle Copy Cat)

If you didn’t know already, I’m Mexican American.  I LOVE my culture.  It’s so full of color, flavor, and spice.  My grandmother was and still is my idol.  I miss her terribly.

While I am incredibly sad that she is no longer with me on this Earth, I am glad that she doesn’t know that I do not know how to make Mexican rice.  That’s right.  I just can’t.  It either comes out in one big clump, or burns at the bottom and the whole batch is toast.  My cousin, she can make LOADS of it.  I just don’t get it.

But this, you guys, is a game changer.

I made rice and it was perfect.  No, it wasn’t the traditional Mexican rice- but it was close to Chipotle rice and that for me- is close enough- for now.

It was SUPER fast and amazingly easy.  This made enough for about four small side servings.  If you want to make more, double or triple this recipe.

OK- I have to type fast on this one- I hear Julia has awoken from her nap!

Cilantro Lime Rice

Ingredients:

  • 3 tbsp. of fresh cilantro (chopped)
  • 1 tbsp. of fresh lime juice
  • 1 tsp. of salt
  • 2 tbsp. of vegetable oil
  • 1 1/4 cup of chicken broth
  • 1 cup of long grain rice

The broth is hiding.

Measure out your rice.

Put your rice into your instant pot.  Make smiley face if desired.

Put in ONE tbsp. of veggie oil

Put in one tsp. of salt

Pour in your 1 1/4 cup of chicken broth.  OR you can use water if you don’t have broth.

Put on your lid, make sure it’s on seal!

Pressure cook for 3 minutes. When this is up, NATURAL PRESSURE RELEASE for 7 minutes.  That means DON’T move your valve.  Just let it be.  Also make sure that your Instant Pot “keep warm” is off.

Chop up the cilantro.  Yum!

Squeeze your lime.  You can cheat and buy lime juice but for me, it doesn’t taste the same. 1 tbsp. is about half a lime.

Put it all in a bowl, along with the 1 tbsp. of veggie oil.

Mix it all together!

Your rice should be NATURALLY releasing now.  7 minutes.  Clean up while this is going on!

Once the 7 minutes is up.  Quick release.  This will be super short and sweet.

Fluff in a bowl (or in your pot if you wish)

Mix in your cilantro lime mixture.

Make sure you get it all covered!

And boom!  Your side dish of amazing rice is complete!

  1. I made this as a side for some spicy fish tacos, and IT WAS AMAZING!!! The rice was quick and the lime flavor perfectly complemented the tacos. As the first dish I have made in the Instant Pot, this was extremely easy and received a lot of compliments! This is a great recipe with clear instructions and helpful visuals for those of us who always second guess what we are doing! 🙂
