If you didn’t know already, I’m Mexican American. I LOVE my culture. It’s so full of color, flavor, and spice. My grandmother was and still is my idol. I miss her terribly.
While I am incredibly sad that she is no longer with me on this Earth, I am glad that she doesn’t know that I do not know how to make Mexican rice. That’s right. I just can’t. It either comes out in one big clump, or burns at the bottom and the whole batch is toast. My cousin, she can make LOADS of it. I just don’t get it.
But this, you guys, is a game changer.
I made rice and it was perfect. No, it wasn’t the traditional Mexican rice- but it was close to Chipotle rice and that for me- is close enough- for now.
It was SUPER fast and amazingly easy. This made enough for about four small side servings. If you want to make more, double or triple this recipe.
OK- I have to type fast on this one- I hear Julia has awoken from her nap!
Cilantro Lime Rice
3 tbsp. of fresh cilantro (chopped)
1 tbsp. of fresh lime juice
1 tsp. of salt
2 tbsp. of vegetable oil
1 1/4 cup of chicken broth
1 cup of long grain rice

I made this as a side for some spicy fish tacos, and IT WAS AMAZING!!! The rice was quick and the lime flavor perfectly complemented the tacos. As the first dish I have made in the Instant Pot, this was extremely easy and received a lot of compliments! This is a great recipe with clear instructions and helpful visuals for those of us who always second guess what we are doing! 🙂
